Tuesday Tips - Make Ahead Breakfast

If there are any pointers I can give to expecting parents, the biggest one to me would be to prepare for the fact that cooking with a newborn is tough.  Sure, for the first week, maybe even the second, friends and family might bring you meals.  Then what?  You still haven’t slept and you’re still getting used to holding a newborn while working on cooking or cleaning.  How does one even find the time to take a shower, let alone cook a meal?  It’s all just beautifully messy. 
To make life just a little bit easier, wouldn’t it be nice to be able to just pull a homemade meal out of the freezer and throw it in the oven?  Make ahead freezer meals are a lifesaver.  So, I thought it might be nice to share an idea or a recipe on here every once in a while.  As a newborn photographer, I obviously love the newborn stage and all that comes with being a new parent. 

Dinner is the obvious meal that most people make ahead, but what about breakfast?  Wouldn’t it be nice to eat something other than cereal or toast or frozen store bought waffles in the morning?  In our house, we love making (okay I make them and my family eats them) mini baked egg frittatas.  They are so unbelievably simple to make too. 


Mini baked egg frittatas
12 eggs; beaten
chopping vegetables of your choice; about 3 cups total
Cheese, optional
Crumbled Bacon or other breakfast meat of choice, optional

Preheat oven to 350º F.  Grease a muffin tin with cooking spray; set aside.  Saute your vegetables over medium-high heat for about 5 minutes.  Fill each muffin tin cup with your fillings and cheese about 1/2 way.  Top each muffin tin cup with beaten eggs.  Bake for 20-25 minutes.  Once cooled enough to handle, wrap each frittata in plastic wrap and store in a freezer bag in the freezer.



When ready to eat, unwrap frittata from plastic wrap, heat on high in the microwave for 1 - 1.5 minutes (I place mine on a paper towel to absorb some of the moisture.

Enjoy a nice hot breakfast when you’re feeling like the last thing you want to do is cook!
